We feel fortunate to be able to dedicate ourselves to the production of this essential ingredient of our gastronomy, and all from our own Extra Virgin Olive Oil – EVOO mill, the Almazara Artal.
Our oils contain all the essence of Aragon in a single bottle. Only suitable for exquisite palates.
Own oil mill
Our History
After many years dedicating ourselves to the pampering and care of our olive trees and our two brands of olive oil, El aceite de Marta and Safeito; in November 2019 we decided to take a step further and build our own oil mill.
From there, we control all phases of production, elaboration and quality of our Extra Virgin Olive Oils.
We prioritize the traditional and artisanal elaboration of our products, to achieve a powerful, unique and incomparable flavor. As well as maintaining the tradition and the imprint of our family, that our know-how is reflected in our products.
And as good nature lovers, we have set two main objectives:
- That our mill has a circular economy and is self-sufficient, something we have already achieved and of which we could not be prouder.
- The conversion of some of our olive groves to organic. We must preserve our land so that all future generations will have the pleasure of continuing to enjoy good extra virgin olive oil.

From the oil mill to the table
Our oil goes almost directly from our olive groves to your home.
Our more than 350,000 olive trees live and drink from Aragon, our land.
They live from the wind, the sun, the cold and the fog of the Ribera Baja del Ebro and drink water from this same river that represents us so much. Drop by drop, taking care to give them only what they need and when they need it.
And they decorate the meanders of the Ribera Baja del Ebro and Bajo Aragón in the towns of Escatrón, Sástago and Alborge, La Puebla de Híjar and Jatiel.
The harsh climate of these areas makes the flavor of our oils so characteristic. It is also due to the quality of the types of olives we grow.
The majority? The indigenous olive, the empeltre.
The empeltre is a black olive with olfactory notes of dried fruits, native to Lower Aragon. All oil with this designation of origin must contain at least 80% of this olive so typical of our region.
To provide our oils with more aromas and textures, we also harvest arbequina, arbosana and fulle de salsa, which allow us to produce high quality coupage oils. These combinations make them the best pairing to incorporate in your recipes.
Buying oil from the Artal mill means being sure that you are going to consume an Extra Virgin Olive Oil from the Designation of Origin of Lower Aragon.
And if you do not want to be satisfied with just enjoying our oils on the table, you can come and meet us. We have oleotourism sessions (routes through our farms) and tasting sessions for groups, where you can learn the basics of extra virgin olive oil(EVOO) and taste some of our tasty oils.

This is where liquid gold is born. In our oil mill we give life to our products, with great care and reflecting the experience that accompanies us.
This is the place where we carry out the process of extracting the olive oil from the olives that we harvest ourselves at their optimum ripeness. Then we clean them to remove any remaining dirt or leaves, and separate the oil from the remaining solids and liquids by cold pressing. Always with a strict control of the temperature, to preserve the organoleptic and healthy properties of the extra virgin olive oil.
The place where olive oil is produced is called Almazara. This term comes from the Arabic “al-maṣārah”, which means “place where it is squeezed”.
Historically, the olive mill has been a fundamental space in the olive producing regions of the Mediterranean. And here in our house, at Almazara Artal, it remains the heart of olive oil production.
We also have storage and bottling areas, ensuring that the extra virgin olive oil maintains its freshness and purity from production until it reaches your table.
An olive mill is the space dedicated to the production of olive oil. And it operates following a complex and well-structured process to ensure that the oil is of the highest quality.
At Almazara Artal, the process begins when we receive our freshly harvested olives. Olives that are carefully selected to ensure that only the best make it to the production stage.
The operation of an oil mill includes these phases:
- Washing and cleaning: the olives go through a machine that cleans them of leaves, branches and dust.
- Milling: the olives are ground to obtain a homogeneous paste, where the cells containing the oil are broken.
- Whipping of the paste: this paste is slowly whipped to unite the small drops of oil and facilitate its extraction.
- Oil extraction: through cold pressing, we separate the oil from the water and the remaining solids. At a controlled temperature to preserve the aromas, flavors and properties of the oil.
- Storage: the oil is stored in tanks under controlled conditions to protect it from heat, light and air, factors that could alter its quality.
And once these phases are completed, our oil, which is the soul of the Mediterranean diet, can be enjoyed.
