Organic olive groves aim to produce Extra Virgin Olive Oil (EVOO) without the use of synthetic chemical products, whether fertilizers, herbicides or pesticides, thus helping to protect the natural resources and biodiversity present. The result is a high quality olive oil, just like conventional EVOOs, but which differs from conventional EVOOs by prioritizing sustainability and environmental protection, an increasingly important aspect for many consumers.
In an organic olive grove, tillage and cultivation practices are oriented to maintain or increase the organic matter and biological activity of soils, in order to reinforce stability and prevent soil erosion. This means that only the system’s own natural resources are used, and there is a strict limitation on the use of certain products that can damage the soil, such as chemicals present in fertilizers, herbicides and pesticides.
Why are our extra virgin olive oils organic oils in conversion?
For a product to be legally identified as an organic product, the farm where it is produced must go through a period called conversion period. This conversion period is nothing more than the time that must elapse since a farmer submits his plots to the control of a competent body until the product obtained complies with the requirements of organic product and can, therefore, be sold with the organic label.

How long does it take to start selling with the organic label?
In our case, in Almazara Artal, we are in the last phase of reconversion, so that in the next harvest we will be able to label our AOVES as Bio/Eco certified by the CAAE.

As mentioned above, a three-year transition period is required before a product can be marketed as organic, as crops must be grown on land that has not been treated with restricted products for a certain period of time.
Once this time has elapsed, the crop can be marketed with the organic label as long as the competent body in organic agriculture certifies it.
How to convert a crop to organic?
To convert an olive grove crop into an organic one, preparations made with natural elements should be used, avoiding any pesticide or herbicide containing chemical substances.
We can conclude that the principles that should govern an organic olive grove cultivation are:

Soil protection. To ensure optimum soil protection, chemicals should not be used, but plant components should always be used, which prevent erosion and contribute to the fertilization of the crop and provide a suitable habitat for the natural enemies of the plants. In addition, they should increase the organic matter in the soil and, therefore, its biological activity.

Ecological fertilization. When fertilizing olive trees, methods based on the efficient use of all by-products generated on the farm should be used. For example, compost from olive mill waste (alperujo), manure and some commercial fertilizers permitted by legislation.

Pest and disease control. For the control of possible pests or diseases affecting the olive trees, natural products of vegetable origin must also be used. Only phytosanitary products authorized by law may be used.
